Our classic French Apple Tart, or Tarte aux Pommes, gives you a double dose of apples, a layer of nicely flavored home-made stewed apples topped with a layer of apples slices. The edges of the apples are beautifully brown and crisp. The finishing touch is the glazing with apricot preserves.

Another variant of the tart, this one finds its origins in the Périgord area, in France : nuts and soft caramel : the perfect combination.
AKA Amandine, this is a great tart made with crisp sweet pastry, poached pears, almond cream topped with roasted sliced almonds.
This pie is prepared to celebrate Epiphany in France and is sold in most bakeries during the month of January. Called galette des rois, it consists of flaky puff pastry layers with a dense center of frangipane (almond cream filling).Traditionally, a small porcelain trinket is hidden into it and symbolizes luck and prosperity to whoever finds it in their slice. The finder is designated “king” or “queen” for the evening… and is also responsible for purchasing next year’s Frangipanne !
